This Crock Pot Cheesy Potatoes and Chicken recipe is super simple, while still being delicious! The cheese sauce compliments the chicken and potatoes wonderfully!

How to Make Cheesy Potatoes and Chicken in a Slow Cooker

I was thinking the other day what I could make from what I had in the cabinets. Then I remembered the Crock Pot Cheesy Potatoes and Smoked Sausage I made, and thought, "Hey! I could try that with chicken!" It worked out really well! I added in a bit more milk so you don't have to pre-cook the potatoes, so it is a thinner sauce than the original recipe I adapted this from, but it is so yummy!

Crock Pot Cheesy Potatoes and Chicken Recipe
- 8 potatoes peeled and cut into small cubes
- 1 onion diced
- 16 oz Velveeta cubed
- 1.5 lb boneless, skinless chicken cut into large cubes
- salt and pepper to taste
- 2 cup milk

Put all your ingredients in your 6-quart slow cooker with the potatoes on bottom

Cover and cook on low for 4-6 hours or high for 2-3 hours, stirring occasionally.
